[Foie gras from artisanal chickens from the Landes and its smoked counterpart, combined with chocolate nougatine, red and yellow bétraves for a sour and sweet flavour, and a light truffle perfume]

Pan-fried foie gras

・Goose foie gras………120g (Landes, France)

・Milk: 150cc (milk fat 3.6%, pasteurized)

・Salt: a little

・Clarified butter: a little

 

Chips for garnishing sautéed fish

・Bacon (thinly sliced)...appropriate amount

・Clarified butter... a small amount

・Red beets (thinly sliced)…6 slices

・Yellow beets (thinly sliced)…6 slices

・Frying oil...appropriate amount

・Salt...appropriate amount

 

Smoked foie gras mousse

・Goose foie gras (from Les Landes, France)………40g

・Salt...a small amount

・Black pepper...a small amount

・Cumin...a small amount

・Fir leaves: A small amount

 

Matcha Crumbs (makes one 18cm diameter x 6cm high mold)

・Whole eggs: 3

・Granulated sugar...70g

・Trehalose ………40g

・Cake flour ………110g

・Melted butter …………50g

・Matcha tea ………10g

・Salt...appropriate amount

 

Nougatine Chocolate

○. Pate Sable (use 50g of the following)

・Butter ………50g

・Sugar: 50g

・Egg yellow……25g

・Cake flour ………60g

・Salt …………1g

・Cacao powder …………18g

・Sugar ………40g

・Mizuame syrup………10g

・Salt...appropriate amount

 

Truffle bubbles

・Black truffles: 20g

・Milk (used for pan-fried foie gras)...appropriate amount

・Salt...a small amount

・Truffle vinegar...a small amount

・Xanthan gum: A small amount

*Xanthan gum: A thickening polysaccharide made by fermenting starch such as corn.

Used to increase the viscosity of liquids.

 

Beets

・Yellow beet……1 piece

・Butter...appropriate amount

・Alkaline water …………appropriate amount

・Sherry vinegar...a small amount

・EV olive oil ………a small amount

・Honey (acacia)………30g
