[Ingredients (for 4 people)]

"vegetables"

・Yellow carrots ……2 pieces

・Orange carrots ………2

・Turnip ……2 pieces

・Yellow turnip……2 pieces

・Radish ………2 pieces

・Green radish …………2 pieces

・Rose radish …………2 pieces

・Betrave (Tonka di Sigozzia species) ………4 pieces

・Romanesco cabbage tips …………4 heads

・Salted butter...appropriate amount

Cream of onion

・Onions (mild, from the Cévennes, etc.) ... 4

・Milk: 400cc

・Water: 400cc

・Salt (Fleur de Sel) …………4 pinches

Semolina flour kneaded with oil

・Semolina flour (very small)………200g

・Argan oil: 2 teaspoons

・EV olive oil ………a small amount

・Hot water……40cc

Finishing touches

・Salted butter………60g

・Juice of 1 lemon

・ Purslane (leaves)...appropriate amount

* Purslane (leaves) - A perennial plant belonging to the Portulacaceae family. The leaves are small and fleshy.

Yellow, white and red flowers bloom at the ends of the branches.

[How to make]

"vegetables"

Wash the vegetables and peel any that need it.

② Place the vegetables into a pot by type and pour water over them until they are just covered. Add a moderate amount of butter to each vegetable and boil until they are firm to the touch. Reserve 400cc of the cooking water.

Cream of onion

1) Peel the onion and slice it very thinly.

②Put ① in a frying pan, add butter and water, and heat without browning.

③ Blend ② with the cream in a blender and strain. Season with salt.

Semolina flour kneaded with oil

1. Put semolina flour in a pot, add argan oil and EV olive oil, and heat. Add hot water little by little while stirring. Keep warm.

Finishing touches

1. Cut the vegetables into bite-sized pieces and add them to a frying pan along with the cooking water from the cut vegetables.

②Add butter and lemon juice, heat, and glaze the vegetables.

3. Place 2 on a plate with the onion cream and sprinkle with sperislane leaves. Sprinkle with semolina flour mixed with oil and it's done.
