[Basic Japanese cuisine: All you need to remember]

How to make popular homemade side dishes and rice dishes such as nikujaga (beef and potato stew), yakisoba (buri daikon) and chirashi sushi, which you may think you know but actually don't really understand.

Based on this theme, I would like to share with you some basic side dishes and rice recipe ideas.

Fry "saba simmered in miso" with tomatoes and garlic and serve on bread for a simple bruschetta.

[Mackerel bruschetta]

[Ingredients for 2 people]

・"Simmered mackerel in miso" (see previous blog)・・・1 slice

・Tomato: 1

・1 minced garlic clove

・Finely chopped green onions...appropriate amount

・Baguette・・・6cm

* Olive oil, coarsely ground black pepper... appropriate amount

[How to make]

1. Roughly chop the tomatoes. Cut the baguette into 1cm thick slices and toast in a toaster oven until golden brown.

②. Heat a little olive oil and garlic in a frying pan. When the aroma comes out, add the tomatoes and stir fry briefly.

3. Add the "Miso-ni" mackerel and stir fry while mashing it with a wooden spatula to break up the flesh. Remove any bones that come out.

④. Place the scallions and green onions on the baguette from ①, and sprinkle with a little pepper.

[material]

・"Fried salmon" (see previous blog)...5-6 slices Shiitake mushrooms...2 pieces

・Onion・・・1/4

・ Green pepper・・・1

・Carrot・・・5cm

《Beef Sauce》 [1 ½ cups of dashi stock, 2 tablespoons of mirin, soy sauce, tomato paste

1/2 tablespoon each of ketchup and 1 tablespoon of vinegar]

○. Water-soluble potato starch

[Potato starch, 1/2 teaspoon water]

* Coarsely ground black pepper... a moderate amount

[How to make]

1. Remove the stems of the shiitake mushrooms and thinly slice them. Slice the onion lengthwise into thin strips. Cut the bell pepper in half lengthwise and thinly slice it. Also thinly slice the carrots.

②. Mix the ingredients for the sauce in a pot and heat. When it boils, add ① and simmer for about 5 minutes until the vegetables are soft.

③. Add the water-dissolved potato starch to thicken the mixture.

4. Place the deep-fried salmon in a bowl, pour the seasoning from 3 over it, and sprinkle with a little pepper.
