[Basic Japanese cuisine: All you need to remember]

 

How to make popular homemade side dishes and rice dishes such as nikujaga (beef and potato stew), yakisoba (buri daikon) and chirashi sushi, which you may think you know but actually don't really understand.

We will introduce not only the basic recipe, but also tips to make it even more delicious.

"Braised pork"

With thinly rolled bread

[Peking Duck Style]

 

[Ingredients for 2-3 people]

・"Braised pork" (see previous blog) ... about 3 slices

・Cucumber・・・1/2

・Bread (8 slices)・・・・4 slices

 

[How to make]

1. Cut off the crusts of the bread, cut it in half lengthwise, and roll it into thin strips using a rolling pin.

 

②. Slice the cucumber diagonally and then into thin strips. Drain the braised pork and cut it into small bite-sized pieces.

 

③. Place ① and ② in a bowl and mix the ingredients for the miso sauce on top. Place ② on ①, spread the miso sauce on top, roll it up and eat.

 

 

Add eel to rolled omelet and enjoy the taste of a traditional Japanese restaurant: rolled omelet!

[Umaki]

Ingredients Serves 2-3 people

Grilled eel・・・・50g

Eggs...3 pieces

Grated mitsuba (grated daikon radish and roughly chopped mitsuba)

Dashi stock・・・・90ml

Light soy sauce (or soy sauce)・・・・1 teaspoon Water-dissolved potato starch [1 tablespoon each of potato starch and water]

※Sake and salad oil

 

[How to make]

1. Cut the eel into 1cm pieces, arrange on a heat-resistant plate, sprinkle with 1/2 tablespoon of sake, cover loosely with plastic wrap and microwave for about 20 seconds.

 

2. Beat the eggs in a bowl, add the dashi stock, light soy sauce, and water-dissolved potato starch and mix.

 

③. Make the rolled omelet in the same way as ② and ③.

When the edges are cooked a little, place the eels in a horizontal row, stacking them a little toward the front, and fold the egg in half with chopsticks toward the front and push it toward the back. Cook the remaining egg mixture in the same way.

 

④. Remove from the oven to a cutting board, let cool, cut into desired sizes, place on a plate, and garnish with grated mitsuba. You can also sprinkle powdered sansho pepper on top if you like.
