[Basic Japanese cuisine: All you need to remember]
How to make popular homemade side dishes and rice dishes such as nikujaga (beef and potato stew), yakisoba (buri daikon) and chirashi sushi, which you may think you know but actually don't really understand.

[Fried chicken wings]
[Ingredients for 2-3 people]
・Chicken wings・・・・8 pieces
a. Sake・・・2 tablespoons
a. Salt: 1 teaspoon
・Lettuce, white sesame seeds... appropriate amount
b. Grated ginger, grated garlic... 1/2 teaspoon each
b. Sake, soy sauce, mirin...2 tablespoons each
b. Vinegar... 1 tablespoon
b. Sugar: 1 teaspoon
*Potato starch, frying oil, coarsely ground black pepper... appropriate amounts
[How to make]
①. Put all the ingredients for the sauce in a small saucepan, mix, and heat. When it thickens slightly, turn off the heat.
2. Poke the chicken wings with a fork to make holes all over the surface.
③. Put the seasonings (a) and ② into a bowl and rub together with your hands until the salt is no longer lumpy.
④. Coat each stick generously with potato starch.
⑤. Heat the oil to a high temperature (about 180°C) and deep fry ④ for 4 to 5 minutes. When the surface turns golden brown, the bubbles around it get smaller, and the wings float, remove them from the oven and drain the oil.
⑥. Tear lettuce into bite-sized pieces and place it on a plate, then top with ⑤. While it's still hot, pour the sauce from ① over it and sprinkle generously with sesame seeds and pepper.

Poke holes in the surface with a fork.
