[Tastes you'll want to make when the season comes]

 

Thanks to improvements in cultivation and preservation methods, a wide variety of imported foods are now available on supermarket shelves.

 

Foodstuffs that are normally in season are now often available in supermarkets all year round.

However, using seasonal ingredients is also one of the joys of cooking.

 

Seasonal ingredients are tasty and rich in nutrients.

The price is stable and easy on the wallet, and best of all, it brings a seasonal feel to the table.

 

Bamboo shoots in spring, pacific saury in autumn, and so on...

 

This time, we will introduce the fifth recipe. We hope that this recipe will be a hint for you to create a menu that takes into account the seasons.

 

◎. Turnip

It is in season in spring and winter. If Japanese turnips are overcooked, the flesh can melt and the strings can remain.

When eaten raw, the strings aren't noticeable and you can taste the sweetness of the turnip itself.

 

 

[Turnip salad]

The vibrant green of asparagus and cucumbers, the red of cherry tomatoes, the shiny purple of deep-fried eggplant, etc.

We have combined colorful vegetables that complement the pure white turnip.

 

[Ingredients (serves 14)]

・Turnip…3 pieces

・Green asparagus…5 stalks

・Eggplant……1 piece

・Cucumber: 1

・Cherry tomatoes………………10

 

[dressing]

a. Onion (medium size) ………………1/2

a. Mustard………………10g

White wine vinegar……………………100

a. Olive oil………………200ml

a!Salt………………5g

a. White pepper………………1g

a. Sugar………………2g

 

[How to make]

①. Make the dressing. Put all the ingredients in a. except for the olive oil into a blender and blend until there are no onion chunks. Once the onion is smooth, add the olive oil and blend further. Once the vinegar and oil are emulsified and mixed, transfer to an empty plastic bottle.

 

2. Cut the turnip into eight pieces, peel it, remove the skin, place it in a bowl and sprinkle with salt.

 

③. Remove the stems from the asparagus, cut off the tough parts at the base, boil in salted water until firm, and cut into bite-sized pieces. Remove the stems from the cherry tomatoes.

 

4. Cut the eggplant in half lengthwise, make decorative cuts in the skin with a knife, deep fry in oil, and cut into bite-sized pieces.

 

⑤ Cut the cucumber into chunks and sprinkle with salt.

 

⑥. Drain the turnip and cucumber, put them in a bowl with ② and ③, and mix with ①'s dressing. Arrange them on a plate to make them look colorful.

 

 

[Instant pickled turnip]

This is a simple pickle that only requires salt and includes turnip leaves, which are abundant in Sakae.

It's quick to make and perfect for when you want another dish on the table.

Cut the turnip in half lengthwise, then slice it straight down along the grain.

 

[Ingredients (for 2 people)]

・Turnip……2

・Turnip leaf stalks...1-2

・Salt: 3% of the turnip's weight

 

[How to make]

1. Peel the turnip, cut it in half and slice it into 2mm thick slices. Chop the stem into small pieces.

 

②. Put ① in a bowl, add salt, mix lightly, and leave for about 15 minutes to remove the moisture.

 

③. Squeeze the water out of ② and place in a serving dish.
