[Traditional cuisine of Piedmont] Piemonte

Cuisine around Turin
* Tripe minestra: A dish made by simmering tripe (beef stomach, also known as tripe) in tomato sauce.
* Finanziera: A stew made with chicken combs, chicken liver, veal thymus (lie de veau), mushrooms, etc. It can be served as a single dish, or combined with rice to make risotto, or with pie dough, or used as one of the sauces.
Canavese cuisine
