Today I would like to talk about Italian regional cuisine.
Italy and France are not only neighboring countries, but they also share the same climate and ingredients in some regions, so they have many similar dishes.
This is a story about Italian cuisine, especially regional cuisine.

Today we’d like to introduce you to the Piedmont region.
It is the westernmost of Italy's 20 regions, bordering Switzerland and France across the Alps.
The regional capital, Turin, was once the capital of the Kingdom of Italy (1861-1946) ruled by the House of Savoy before the current Italian Republic was formed, and is also an important place historically that played a very large role in the unification of Italy.
In terms of topography, 43% is mountainous, 30% is hilly, and the remaining 27% is plains, making it a very undulating region that produces a wide range of products.
The climate is typical of inland, with large temperature differences and clearly defined seasons.
There is a large daily temperature difference, and in winter, large amounts of snow fall in the mountains, while the plains and hills are shrouded in thick fog.
As the name "pede montis" (from the Latin "pede montis") suggests, the area is rich in mountain delicacies, including the king of autumn delicacies, the white truffle, as well as mushrooms such as porcini and ovoli mushrooms, and game meat.
During the white truffle season from October to December, the city of Alba becomes the center of the white truffle market, which is a large-scale trade center for products from Central Italy. In addition, the mountain areas are used for grazing, and a wide variety of unique dairy products such as cheese and butter are produced.
On the other hand, in the Padana plain in the eastern part of the state, rice cultivation is widespread, using the Po River and the Cavour Canal for irrigation, accounting for more than 60% of national rice production, and the region is the top producer of beef cattle in Italy.
In the hilly regions, neatly arranged vineyards line the ground like a comb, producing a variety of fine wines, but the land that is not suitable for grapes is used to cultivate other fruit trees such as hazelnuts, or corn and vegetables, and the production volume is very large.
A meal in Piedmont begins with several plates of antipasto (appetizers).
This is particularly evident in the Langhe region, where a normal menu includes five or six dishes, but at wedding receptions the number can reach as many as 30.
In addition to salami, various salads are often considered antipasto.
Piedmont cuisine is usually based on animal fats such as butter and lard, but the famous vegetable dish "Bagna Cauda" uses olive oil.
Although olives are not grown in the region, there is a long history of barter trade with the neighboring olive oil producing region of Liguria, and the influence of this can be seen in the traditional cuisine.
Another thing worth mentioning is the richness of the desserts.
Turin has many chocolate factories and the variety of baked goods it offers is second to none among the 20 regions.
The development of this confectionery culture seems to have been heavily influenced by the existence of Italy's last royal family, the House of Savoy.
