Today I would like to talk about Italian regional cuisine.

Italy and France are not only neighboring countries, but they also share the same climate and ingredients in some regions, so they have many similar dishes.

This is a story about Italian cuisine, especially regional cuisine.

 

 

[Cuisine of the Aosta Valley]

Valley of Aosta

Aosta Valley is located in the northwestern corner of Italy and is the smallest of the 20 Italian regions.

 

 

○. Broad bean pasta

Favo

 

"Favo" is a dialect word for "fave" (broad beans). The use of bottled tomato sauce, hard, round, cross-cut black bread that lasts a long time, and dried or frozen broad beans are typical of the Aosta region, where the cold weather makes it necessary to preserve food for the winter.

The texture of the hard toasted bread remains light and crunchy even after it has been simmered in tomato sauce and baked in the oven, making the meal enjoyable all the way to the very end.

Although the food is not flashy, it allows you to enjoy the taste of food born out of the everyday lives of ordinary people.

 

[How to make]

1. Cut the onion, carrot, and celery into bite-sized pieces and fry in olive oil. Add the sage and fry further, then add the whole tomatoes and simmer to make the tomato sauce.

2. Heat a frying pan, melt the butter, and toast the stale brown bread (you can also use pain de campagne instead).

③. Boil the short pasta*1 in salted water, add the broad beans (taken out of the pods) halfway through and boil together.

④. Add the short pasta and broad beans from ① to the tomato sauce, and mix in the black bread cut into bite-sized pieces. Place in a heat-resistant dish, top with thinly sliced fontina cheese, and bake in a 200℃ oven for about 12 minutes.

*You can prepare a large quantity and eat it as is or reheat it.

 

*1. The short pasta used includes penne, fusilli (twisted short pasta), macaroni, and pipette (bent pipe-shaped short pasta).

 

 

○ Chestnut risotto

Novara and Vercelli in the neighboring Piedmont region are rice-producing regions.

As a result, the Aosta Valley is home to many rice dishes, including risotto and soups.

As is typical of this region, which uses a lot of dairy products, when cooking risotto, more milk is added than with broth.

The addition of chestnuts, a local specialty, evokes the Aosta Valley, overlooking the famous peak of Monte Bianco (Mont Blanc).

 

[How to make]

1. Peel the chestnuts and steam them for 15 minutes, then peel off the astringent skin.

②. Boil the chestnuts for 5 minutes in beef broth (beef broth with onions, carrots, and celery for about 6 hours).

3. Add more milk than the broth, bring to a boil, then add the rice and simmer.

④. Season with salt and finish by mixing in plenty of butter.
