Soupe de carotte

It is a pottage soup that has been well-established at French restaurants and incorporates the technique of whipping to finish.

Originally, the sweetness and aroma of carrots are tightly packed, but by whipping it, it becomes a more elegant mouthfeel and transforms into a light soup.

 

[Material] For 4 people

・ Carrot ……… 1 bottle

・ Poironegi ……… 1/4

・ Onions ……… 1/4 piece

・ Pacon slice ………… 1/2 sheet

・ Potatoes ……… 1/2 pieces

・ Unsalted butter ……… 2 tablespoons

・ Von Blanc ……… 500ml

・ Milk ……… 50ml

・ Cream ……… 100ml

・ Salt and pepper ……… Appropriate amount

 

[How to make]

①. Finely chop the poironegi, onion and bacon slices. Fry this in a pan with 1 tablespoon butter and melt over low heat until tender. (This is called "suer sue" in French cuisine.) In addition, add peeled and chopped potatoes and fry.

②. Peel the carrots into slices, add 1 tablespoon of butter and fry in another pan of melted over low heat until "shining" appears, and add to the pan of ①.

③. Add von Blanc to the pot of ① and simmer. When the vegetables are soft enough, add milk and boil once. Finish with salt and pepper to taste.

④. Put ③ in a mixer and turn it to make a complete puree. Strain this with a strainer such as Chinois to make it smooth.

⑤. Make the cream stand for 8 minutes and add it to the warmed ④. Whisk with a hand mixer to finish the soup.

⑥. Pour into a plate for soup and it's done.

Work 1-3 days a week, including weekends

I am thinking of shifting about 3 to 5 hours a day between 18:00 and 23:00.

Shifts such as every Friday or every Saturday are OK.
