Today, I would like to introduce French cuisine made with sauce that makes the best use of the taste of vegetables.

[White fish poele-cabbage sauce-]

French cuisine featuring white fish and sweet and tender cabbage.

The sauce that makes use of cabbage can be combined with sausages, etc., in addition to the fragrant and poired white fish, and can be provided in a more unpretentious style.

White fish has no peculiarity in a good sense and is a light-tasting ingredient.

And I think that cabbage is a vegetable that is widely used at home, but today it is a dish that you can feel the taste of the season from such simple ingredients.

Also, if you use the soft "spring cabbage" that starts in early spring, the cabbage you handle will be finished in a sweeter sauce.

[Material] For 4 people

・ Cabbage ……… 1/2 pieces

・ White fish (sea bass, red sea bream, etc.) ………… 80g x 4

・ Olive oil ………… Appropriate amount

・ Garlic ……… 1 piece

・ Bacon slices ……… 4 pieces

・ Salt, pepper ……… Each appropriate amount

・ Time (dry) ……… Appropriate amount

・ Von Blanc (dashi stock from chicken and vegetables) ……… 200ml

・ Time (fresh) ……… Appropriate amount

 

[How to make]

①. Peel off the cabbage one by one and cut off the hard core. Cut it into slightly larger pieces,

②. Grind the scales of the white fish and grate it into 3 pieces. Make four 80g fillets.

③. Sprinkle salt and pepper on the sliced white fish, season it, and bake it from the skin on medium heat in a frying pan covered with olive oil. When the skin is crispy, turn it over and bake it in the oven for 3-4 minutes, then cook it to the inside.

④. Make cabbage sauce. Put olive oil in a well-heated frying pan and add the crushed garlic. Fry the sliced bacon slices, and when the bacon is browned, add the cabbage from ① and fry.

When the cabbage fried in the frying pan of ⑤.④ comes a little soft, sprinkle salt and pepper on the cabbage, lightly sprinkle the drying time, add the stock blanc, fry and simmer lightly.

⑥. Serve the cabbage and bacon from ⑤ on a plate. Lightly boil the soup left in the frying pan, season with salt and pepper, and add a small amount of olive oil to finish the sauce.

⑦. Place the baked white fish from ③ on the cabbage from ⑥ and sprinkle with the sauce from ⑥. It is completed by decorating the fresh time.
