Today, I would like to introduce a delicious French hors d'oeuvre that you can easily enjoy.

 

[Flounder carpaccio]

Fresh white fish that can be eaten with sashimi goes very well with Parmigiano cheese. It is delicious even if it is made into carpaccio, and it is a perfect dish for white wine.

"Basil sauce", which is also useful for coloring the presentation, has a good scent and is appetizing.

・ Flounder ……… 1 tail

・ Salt ……… Appropriate amount

○ Vinaigrette sauce

a. Sherry vinegar ……… 25ml

a. Extra virgin olive oil ……… 75ml

○ Basil sauce

b. Basil leaves ……… 30 sheets

b. Almond slices ……… 30g

b. Parmigiano cheese ……… 40g

[How to make vinaigrette]

1. Put a. Sherry vinegar in a bowl and stir with a whisk while dripping a. Extra virgin olive oil from above like a thread. (Since water and oil are difficult to mix, add oil little by little to emulsify and mix.)

[How to make flatfish carpaccio]

②. Cut the green onions into 5 cm lengths, boil them in hot water until they become squishy, and raise them in a colander. While the drained green onions are hot, mix them with a small amount of vinaigrette (made by the above procedure) and let them soak in the taste.

③. Spread the green onions of ② on a plate, and cut the flatfish of ① on it and arrange them. Sprinkle lemon juice and olive oil over it and sprinkle with chopped shallot and siblet.

④. Cut the vegetables from c. For salad into pieces that are easy to eat, put them in a bowl, and mix them with vinaigrette. Place this on the flounder of ③.

⑤. Sprinkle the basil sauce and add color to complete.
