[Roasted veal ~ mustard sauce ~]
Côte de veau roti sauce moutarde
It is a dish that adds glamor to the party by roasting the veal boned back meat.
A simple sauce with a little mustard added to the veal soup enhances the delicate taste of the veal.
Veal is called beef up to 10 months old, and if you make it with "White Veil" grown only with milk, it will be a more delicate and excellent dish.
* Veal is light and sweet, and is very soft. Because it is high in protein and low in fat, it can be said to be a healthy ingredient.

・ Veal boned back meat ………… 1 piece
・ Salt, pepper ……… Each appropriate amount
・ Salad oil ………… Appropriate amount
・ Rosemary ……… Appropriate amount

・ Broccoli ……… 1/2 shares
・ Cauliflower ………… 1/2 shares

・ Grain mustard ……… 1 tablespoon
[How to make]
①. Sprinkle salt and pepper on the veal and bake it in a frying pan covered with salad oil over high heat to harden the surface.
②. When the surface is browned, transfer it to the baking sheet for the oven, put rosemary and unsalted butter on it, and bake it in the oven preheated to 200 ° C for about 10 minutes.
③. Garnish vegetables are boiled and then fried in butter and seasoned with salt and pepper.
④. Discard the excess oil on the top plate of the roasted veal and add the stock. Heat this to scrape off the umami that sticks to the bottom and transfer the liquid to a small pan.
⑤. Boil the stock transferred to a small pot to 1/3 of the amount. Add mustard to it and season with salt and pepper to complete the sauce.
⑥. Place the baked veal on a platter and serve the garnished vegetables from ③.
