Today, I would like to introduce a dish that looks gorgeous and is perfect for special events such as Christmas.

[Whole local chicken and vegetable pot-au-feu]

A feast pot-au-feu made with a whole chicken and fresh and delicious seasonal vegetables.

Contrary to the luxurious appearance, the cooking method is "just simmer" and you can finish it with a simple cooking.

In addition, we used plenty of vegetables as ingredients to give a healthy feeling.

It is a party menu that especially pleases female customers.

The point is to extract the umami of the soup stock of the local chicken and the sweetness of the vegetables well, but if you feel the taste of the soup is light, boil only the soup in a separate pot and strengthen the taste to enhance the deliciousness of the local chicken. ..

・ Laurier ……… 2 sheets

・ Cabbage ……… 1/2 pieces

・ Broccoli ……… 1/2 pieces

・ Cauliflower ……… 1/2

・ Cub ……… 2 pieces

・ Mini radish ……… 6

・ Young corn ……… 6

・ Salt, pepper ……… Appropriate amount

[Preparation of whole chicken]

1. For chickens, leave a gap between the breast and the skin and insert herbs (estragon) for flavoring. Add a pinch of rock salt.

2. Sprinkle salt on the whole chicken.

3. Tie the legs with octopus thread and leave it for about half a day to let the taste blend in.

 

[How to make]

①. Put the whole chicken prepared in the above [Preparation of whole chicken] in a pan and fill it with water. Bring this to a boil over high heat, spill it once, discard the boiled soup with the lye, and add water again.

②. Add the carrots that have been peeled and chopped, and the onions that have been stabbed with cloves and bay leaf and split into pieces, and heat them. When it boils, reduce the heat to low and simmer for about 40 minutes. While removing the lye on the way, when the water evaporates and boiled down, add water as needed.

④. Cut broccoli, cauliflower, turnip, mini radish, and young corn into pieces that are easy to eat and boil them. Add this to the pot of ④ and boil it lightly to let the taste blend in.

⑤. In the middle of the deep plate, serve the boiled chicken and vegetables from ④ and serve the soup. Colored with herbs such as thyme and rosemary, served with crude salt and mustard.
